Slice banana into 12 equal sized rounds (about ½ inch thick).
Spread about 1 teaspoon of nut or seed butter on 6 of the slices, and top with the remaining slices to sandwich together. Don’t press down or the peanut butter will escape!
Freeze until firm in a container or on a tray lined with parchment paper (about 2 to 4 hours or overnight).
In a microwave safe bowl, add the finely chopped chocolate. Melt for 1 minute, stir, and repeat until the chocolate has melted. You will not need all of this chocolate, but it will make it easier to dip if there is extra.
Dip the frozen banana slices in the chocolate so 1 side is covered. You can also place chocolate in a plastic bag and snip 1 corner to drizzle chocolate over the banana bites. Let the chocolate harden for 2 minutes. Enjoy immediately or store in the freezer.

To make this recipe dairy free use dairy free chocolate.
Chocolate chips do not melt well for this recipe. Look for a brick of baking chocolate and chop finely. This will melt faster.
If the bananas are too hard when they come out of the freezer, let them sit at room temperature for about 5 to 10 minutes to soften before eating.
