Banana Nut Butter Bites

Directions

Step 1 

Slice banana into 12 equal sized rounds (about ½ inch thick).

Step 2 

Spread about 1 teaspoon of nut or seed butter on 6 of the slices, and top with the remaining slices to sandwich together. Don’t press down or the peanut butter will escape!

Step 3 

Freeze until firm in a container or on a tray lined with parchment paper (about 2 to 4 hours or overnight).

Step 4 

In a microwave safe bowl, add the finely chopped chocolate. Melt for 1 minute, stir, and repeat until the chocolate has melted. You will not need all of this chocolate, but it will make it easier to dip if there is extra.

Step 5 

Dip the frozen banana slices in the chocolate so 1 side is covered. You can also place chocolate in a plastic bag and snip 1 corner to drizzle chocolate over the banana bites. Let the chocolate harden for 2 minutes. Enjoy immediately or store in the freezer.

Tips & Variations

  • You will not need all of this chocolate, but it will make it easier to dip if there is extra.

  • To make this recipe dairy free use dairy free chocolate.

  • Chocolate chips do not melt well for this recipe. Look for a brick of baking chocolate and chop finely. This will melt faster.

  • If the bananas are too hard when they come out of the freezer, let them sit at room temperature for about 5 to 10 minutes to soften before eating.
